Banana Walnut Cake is the easiest way to use very ripe bananas & not let it go a waste. The cake - a moist one, can be enjoyed with a cup of hot beverage (tea or coffee) or even with a scoop of chilled ice-cream.
The cake is prepared without an oven (cooked in a cooker)
The recipe is eggless, gluten free, and has minimum sugar content. So, health-conscious people out there, dive into the recipe!

Ingredients
2 cups Whole Wheat Flour
1 1/2 cup Mashed Bananas
1/2 cup Softened Butter
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 cup Caster Sugar
1/2 cup Chopped Walnuts
1/2 cup Milk
1 tsp Cinnamon Powder
1/2 tsp Nutmeg Powder
Directions of cooking
Start off by preheating the cooker. In a cooker, add 1 cup of salt, place a cooker stand in it cover the cooker without the whistle & keep it on medium flame for 10 mins.
Place the bananas with their skin, on a greased plate and place it in the preheated cooker for 15 minutes and let them cook on a low flame.
Remove the bananas after 15 mins, peel off the skin & mash them.
Sift the flour, baking powder, baking soda, cinnamon powder & nutmeg powder in a mixing bowl and set aside. This forms the dry part of the recipe.
Cream the butter by incorporating sugar in it. Cream it at least for 10 minutes.
Add the mashed bananas and milk to the creamed butter, add pinch of salt & mix.
This forms the wet part of the recipe.
Now, add the dry ingredients in 2 parts to the wet part & fold it. Do not over mix it since this will knock off the air incorporated during sieving.
Once fully incorporated, add the nuts of your choice.
Grease a steel or aluminium container with butter and add the cake mixture.
Give it a few gentle taps to dissolve the air bubbles if any.
Garnish with chopped almonds.
Place the container in the cooker on the cooker stand.
Cover the cooker without the whistle and let the cake mixture cook on medium-low flame.
Take off the container, unmould the cake & relish it!
Tips
Sieve the dry ingredients. Since this is an eggless recipe, you want to incorporate air to make it a fluffy one.
Use ripe to medium-ripe bananas since these make the cake super most & full of flavour.
Go for Caster Sugar strictly, because you want bits of granulated sugar while eating.
Also Caster Sugar is ideal for the creaming process.
You can also add berries of your choice to the cake mix.
Cut the cake into small parts/slices and microwave it just before you eat for real experience.
